Notes on sourdough, and on how the app works.

It starts with flour and water: how Sourdough Diary began A starter that sort of worked, an embarrassing number of flat loaves, five jars in the fridge, and a colleague with a million questions.
Which feeding ratio should I use for my sourdough starter? 1:1:1 peaks in about four hours, 1:5:5 in about nine, 1:10:10 in nearly thirteen. Pick the ratio by when you need the starter, not by habit. Why did my sourdough starter stop rising on day 4? A new starter that rose on day 2 or 3 and then went flat is not dead. The first rise came from bacteria that do not last. Keep feeding it.
